Mapping Recources:
Rich Diesal's Mapsource
The Rich Diesal mapping tutorials are exceptionally useful. They're a little out-dated, as they were made for Jedi Outcast, but for the most part they're still useful and will get you going.
Map-Craft
This site has tons of great resources for mapping, including effects lists, model lists, you name it. If you still need help, there's a great community of people there on the forums who are sure to help you.

Lucas Files
Lucas Files has files from many different series of games from Lucas Arts, including the Jedi Knight game series.
Strategic Academy
The Strategic Academy is a place with a bunch of files that, for the most part, were made by Raven after the games were released.
JK3 Files
JK3 Files is a site that reviews and uploads files submitted by modders all over for the Jedi Knight II: Jedi Outcast and the Jedi Knight: Jedi Academy community as a whole.

The Jedi Academy has been around for five years, and there's nothing I can say to sum it up adequately. It is beyond words.
The Jedi Order
Well, the Jedi Order is the clan that I was once a part of. Sadly I made the decision to leave, however the community I found there is one of the greatest, most polite, friendly, and made up of some of the greatest people I've ever met.
The Jedi Praxeum
The Jedi Praxeum is similar in purpose to The Jedi Academy, and one of the owners of The Jedi Praxeum once was a Jedi Master at The Jedi Academy.
